Though this seems as basic as a fried egg on toast, mushrooms and fresh thyme make it taste anything but. Mushrooms are a good source of fiber, B vitamins, potassium, and iron, and a terrific source of flavor. Slice a few cremini mushroom caps and one shiitake and cook them in the pan before you fry the egg. Be sure the pan is very hot, and then add the mushrooms, toss them once, leave them undisturbed to release their moisture and brown a bit before you stir them again. This results in much more flavor. You can also saute finely minced mushrooms if you prefer—a bit of minced shallot and garlic would be welcome additions. Then spread the sauteed mixture on the toast as you would a condiment before topping with the fried egg and a pinch or two of fresh thyme leaves.
