Egg and Bacon Breakfast Burritos 2
2 large egg(s)
Fat free salsa
Uncooked Canadian bacon
2 slice(s), finely chopped
2 medium, (8-inch), warmed
Light sour cream
- Whisk together egg whites and eggs in medium bowl. Stir in salsa, bacon, oregano, salt, and pepper.
- Heat oil in large nonstick skillet over medium heat. Add egg mixture and cook until eggs begin to set, about 1½ minutes, pushing egg mixture toward center of skillet to form large, soft curds. Continue cooking until eggs are just set, about 3 minutes longer.
- Spoon half of egg mixture along center of each tortilla. Fold two opposite sides of each tortilla over to enclose filling. Place burritos on 2 plates and top evenly with sour cream and avocado.
