Instructions

  1. Whisk together egg whites and eggs in medium bowl. Stir in salsa, bacon, oregano, salt, and pepper.
  2. Heat oil in large nonstick skillet over medium heat. Add egg mixture and cook until eggs begin to set, about 1½ minutes, pushing egg mixture toward center of skillet to form large, soft curds. Continue cooking until eggs are just set, about 3 minutes longer.
  3. Spoon half of egg mixture along center of each tortilla. Fold two opposite sides of each tortilla over to enclose filling. Place burritos on 2 plates and top evenly with sour cream and avocado.
  4. Per serving (1 burrito)
