Easy Vegan Queso
Silken tofu blends to an incomparably creamy texture and takes on the flavors of nutritional yeast, cumin, and tomatoes with green chiles so that it's a dead ringer for traditional queso. A high-powered blender will provide the creamiest results. If you don't have one of those, just take your time and blend as long as it takes to get a silky-smooth texture.
Canned diced tomatoes with green chilies
½ cup(s), undrained
- In a blender, combine the tofu, nutritional yeast, salt, and cumin; blend on high speed until completely smooth, 30 seconds to 1 minute. Pour the pureed tofu mixture into a small saucepan; stir in the tomatoes. Cook over medium-low heat until warmed through, 3 to 5 minutes.
