These lean burgers stay wonderfully juicy, thanks to the addition of zucchini. We start with pre-prepped zucchini spirals that we chop into small bits; it’s quicker and easier than shredding a whole zucchini. If you don’t have Cajun seasoning on hand, you can substitute seasoned salt.

Whole wheat panko breadcrumbs

Instructions

  1. Coat an outdoor grill rack or stovetop grill pan with cooking spray. Heat the outdoor grill or grill pan to medium-high.
  2. In a large bowl, combine the turkey, zucchini, panko, and Cajun seasoning until well blended. Divide the mixture into 4 equal portions, shaping each into a ¾-inch-thick patty. Arrange the patties on the grill rack or grill pan; grill until cooked through, 4 to 5 minutes per side.
  3. On the bottom half of each bun, arrange 1 lettuce leaf, 1 tomato slice, and 1 burger patty. On the top half of each bun, spread ½ tbsp mustard and top with 3 pickle chips. Place the tops of the buns on the burgers.
