These lean burgers stay wonderfully juicy, thanks to the addition of zucchini. We start with pre-prepped zucchini spirals that we chop into small bits; it’s quicker and easier than shredding a whole zucchini. If you don’t have Cajun seasoning on hand, you can substitute seasoned salt.
Ingredients
Cooking spray
4 spray(s)
Uncooked ground turkey breast
1 pound(s)
Fresh zucchini spirals
2 cup(s), chopped
Whole wheat panko breadcrumbs
⅓ cup(s)
Cajun seasoning
1 tsp
Light hamburger bun
4 bun(s)
Lettuce
4 leaf/leaves, large
Tomato
4 medium slice(s)
Mustard
2 Tbsp
Hamburger pickle chips
12 chip(s)
Instructions
1
Coat an outdoor grill rack or stovetop grill pan with cooking spray. Heat the outdoor grill or grill pan to medium-high.
2
In a large bowl, combine the turkey, zucchini, panko, and Cajun seasoning until well blended. Divide the mixture into 4 equal portions, shaping each into a ¾-inch-thick patty. Arrange the patties on the grill rack or grill pan; grill until cooked through, 4 to 5 minutes per side.
3
On the bottom half of each bun, arrange 1 lettuce leaf, 1 tomato slice, and 1 burger patty. On the top half of each bun, spread ½ tbsp mustard and top with 3 pickle chips. Place the tops of the buns on the burgers.
