Easy, simple, quick, and delicious--the way great scrambled eggs should be. If you want these to be zero Points, nix the butter.

Ingredients

Egg

2 item(s), large

1% low fat milk

1 Tbsp

Kosher salt

1 pinch(es)

Salted butter

1 tsp

Black pepper

1 pinch(es)

Chives

½ tsp, optional

Instructions

  1. In a medium bowl, whisk the eggs, milk, and salt until well combined.
  2. In a small nonstick skillet, melt the butter on medium. Add the eggs. Let eggs sit in pan undisturbed for 10 to 20 seconds until just beginning to set on the edges.
  3. With a rubber or silicon spatula, slowly stir the eggs. Cook eggs for about 2 minutes. Stir constantly for creamier eggs, stir less frequently for fluffier eggs.
  4. When the eggs look mostly cooked through, remove from heat and continue stirring until set. Transfer to a plate and garnish with black pepper and chives (if using).
