Satisfying chewy-tender ramen noodles combine with convenient broccoli slaw, frozen edamame, and shrimp for a meal that’s far healthier and more satisfying than a package of instant ramen itself.
Ingredients
Dry ramen noodles
1 package(s) without flavor packet
Shelled edamame
1 cup(s), frozen
Canola oil
2 Tbsp
Uncooked shrimp
8 oz, medium, peeled and deveined
Broccoli slaw
12 oz
Less sodium soy sauce
3 Tbsp
Instructions

Bring a medium saucepan of water to a boil. Add the noodles and cook until chewy-tender, 3 to 4 minutes, adding the edamame to the pot during the last minute of cooking. Drain.

Meanwhile, heat a wok or large nonstick skillet over medium-high. Add the oil to the pan and swirl to coat. Add the shrimp to the pan; stir-fry until almost cooked through, about 2 minutes. Add the broccoli slaw to the pan; cook until the broccoli slaw is crisp-tender, 4 to 5 minutes. Stir in the noodle mixture and soy sauce; cook until heated through, about 2 minutes.
