Instructions

  1. In a small bowl, whisk together the eggs, chili powder, salt, and pepper.
  2. Coat a nonstick skillet with cooking spray. Heat on medium. Add the eggs and cook 2 to 4 minutes, until mostly set, stirring. Add the cheese. Remove from heat and stir to melt the cheese.
  3. Arrange the tortilla chips on a plate. Top with the cheesy eggs. Spoon the salsa on top. Garnish with the cilantro, if using.
  4. Makes 1 serving.
