Easy Baby Corn Stir-Fry

This simple side contains just 6 ingredients, takes only 20 minutes to make, and goes well with a variety of mains. Even though the recipe incorporates soy sauce, don’t feel compelled to serve it with an Asian entree; it also pairs well with everything from roast chicken to seared pork tenderloin. We add sweet red bell pepper to keep the flavor mild and family-friendly but you can use a green pepper if you prefer.


Ingredients
Canned baby corn
30 oz, 2 (15-oz) cans
Red bell pepper
1 small
Canola oil
1 Tbsp
Shallot
⅓ cup(s), chopped, thinly sliced
Garlic
2 clove(s), minced
Low sodium soy sauce
2 Tbsp
Instructions

Drain the corn and pat dry with paper towels. Cut the corn crosswise into thin slices. Cut the red pepper lengthwise into thin strips; cut the strips in half crosswise.

Heat the oil in a wok or large skillet over medium-high heat. Add the shallots, garlic, and red pepper; stir-fry 2 minutes. Add the corn and soy sauce; stir-fry until the liquid evaporates and the corn starts to brown, 5 to 6 minutes.
