We saved time in this recipe by using packaged coleslaw mix, a bottled dressing, and chicken breast from a rotisserie chicken.

Ingredients

Packaged coleslaw mix (shredded cabbage and carrots)

3 cup(s)

Red onion

½ small, thinly sliced

Jalapeño pepper

½ small, or red chili, seeded and finely chopped (or to taste)

Cooked shredded chicken breast

1 cup(s)

Light sesame ginger dressing

4 Tbsp

Lime

2 wedge(s)

Fresh mint leaves

2 Tbsp, and/or cilantro, finely chopped

Roasted salted shelled peanuts

¼ cup(s), finely chopped

Instructions

  1. Combine the slaw mix, onion, jalapeño, and chicken in a serving bowl. Toss with the salad dressing and lime juice. Serve garnished with the mint and peanuts.
  2. Serving size: about 2 1/2 cups
