This 10-minute breakfast is absolutely perfect to make for busy mornings, but will still feel special. Our newer and healthier riff on the classic Danish pastry is made with calcium-packed and protein-packed ricotta, as well as the more interesting raisin bread. Be sure that you look for a raisin bread with the least amount of added sugar and, preferably, made with whole-grain flour. The addition of brown sugar, vanilla extract, and cinnamon keeps the taste sweet yet hearty and irresistible. Feel free to pair this sweet morning toast with your favorite berries, or an egg for an extra hit of protein.

Ingredients

Fat free ricotta cheese

¼ cup(s), or low-fat variety

Packed brown sugar

1 tsp, dark variety

Vanilla extract

¼ tsp

Raisin bread

1 slice(s), and cinnamon variety, lightly toasted

Ground cinnamon

tsp, or to taste

Instructions

  1. Combine the ricotta, brown sugar, and vanilla in a small bowl. Spread the ricotta mixture on the toasted bread and sprinkle with the cinnamon. Bake in the toaster oven until hot and bubbly, 3–5 minutes.
