You can turn this into a delicious curried egg salad by chopping the eggs and apples and mixing them into the yogurt mixture along with the scallions and cilantro. If you'd like, you can skip the bread and serve the salad in lettuce cups instead. If you’re making this sandwich and not eating it for a few hours, line both sides of the bread with lettuce to prevent the bread from getting soggy. We call for Madras curry powder, but if you prefer a milder powder, feel free to swap in regular curry powder. Or if you like your curry a little more aromatic, try garam masala.

Ingredients

Plain fat free Greek yogurt

2 Tbsp

Curry powder

½ tsp, Madras variety

Apple cider vinegar

½ tsp

Table salt

1 pinch(es)

Rye bread

2 slice(s), marble variety, toasted

Apple

½ cup(s), diced

Boston lettuce

2 leaf/leaves, or other lettuce leaves

Scallions

1 small, sliced

Cilantro

1½ Tbsp, chopped

Hard boiled egg

2 item(s), large, sliced

Instructions

  1. In a small bowl, stir together the yogurt, curry powder, vinegar, and salt. On 1 side of each of 2 slices of bread, spread the curried yogurt. On 1 slice of bread, layer the apples, lettuce, scallions, cilantro, and eggs. Top with the remaining bread, yogurt side down.
  2. Serving size: 1 sandwich
