Cumin & Smoked Paprika Roasted Pumpkin Seeds
Pepitas are the rich and flavorful green seeds inside the white hull of pumpkin seeds. They are nutrient-packed and perfect for snacking. These are fun to eat right out of hand, but are also delicious tossed into a green or grain salad.
Green pumpkin seeds (pepitas)
- Preheat the oven to 350°F. Line a sheet pan with parchment paper. In a small bowl, mix the pumpkin seeds, oil, cumin, paprika, and salt. Spread the seeds out in a single layer on the prepared pan. Bake the seeds, stirring halfway through baking, until toasted, about 20 to 25 minutes. Let cool completely.
