Ingredients

Canned tomatoes with green chilis

14½ oz, (1 can), diced tomatoes

Orange juice

¼ cup(s)

Scallions

2 medium, thinly sliced

Garlic

1 clove(s), minced

Ground cumin

1 tsp

Table salt

¾ tsp

Black pepper

¼ tsp

Uncooked lean boneless pork loin roast

1 pound(s), trimmed and cut into 1-inch pieces

Uncooked sweet potato

1 large, (about 1-lb), peeled and cut into 1/2-inch pieces

Fresh lime juice

2 Tbsp

Cilantro

¼ cup(s), fresh, chopped

Instructions

  1. Stir together tomatoes, orange juice, scallions, garlic, cumin, salt, and pepper in 4- or 5-quart slow cooker. Add pork and sweet potato and stir to combine. Cover and cook 7 hours on low.
  2. Stir in lime juice. Divide evenly among 4 serving bowls and sprinkle with cilantro.
  3. Per serving (1½ cups)

Notes

Instead of the sweet potato, you can use peeled, cubed butternut squash in this recipe if you prefer.
