Cuban-style slow cooker pork stew
Canned tomatoes with green chilis
14½ oz, (1 can), diced tomatoes
Fresh orange juice
2 medium, thinly sliced
1 medium clove(s), minced
Uncooked lean trimmed pork loin
1 pound(s), trimmed and cut into 1-inch pieces
Uncooked sweet potato(es)
1 large, (about 1-lb), peeled and cut into 1/2-inch pieces
Fresh lime juice
¼ cup(s), fresh, chopped
- Stir together tomatoes, orange juice, scallions, garlic, cumin, salt, and pepper in 4- or 5-quart slow cooker. Add pork and sweet potato and stir to combine. Cover and cook 7 hours on low.
- Stir in lime juice. Divide evenly among 4 serving bowls and sprinkle with cilantro.
