Ingredients

Chopped frozen spinach

1½ cup(s), thawed and squeezed dry

Canned artichoke hearts, drained

3 heart(s), chopped

Reduced fat cream cheese (neufchâtel)

5 Tbsp, softened

Grated Parmesan cheese

½ cup(s), divided

Kosher salt

1 pinch(es)

Black pepper

1 pinch(es)

Salt-free seasoning

½ tsp, such as garlic powder, onion powder, chili powder

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the spinach, artichoke hearts, cream cheese, and half of the Parmesan until well mixed. Season with salt and pepper, along with any other desired seasonings.
  3. Add 1 wonton sheet to each cup of a 12-cup muffin pan. Bake 3 to 5 minutes, or until wonton sheets begin to stiffen.
  4. Evenly divide the spinach filling among the cups. Top with the remaining 1/4 cup of Parmesan. Bake until cheese melts, 8 to 10 minutes.
