These festive crisp rice treats will add fun to all your holiday gatherings. Bring them to the office, send them off to school or leave a few out for Santa.
Ingredients
Unsalted butter
1 Tbsp
Marshmallows

Mint extract
½ tsp
Crispy rice cereal
5 cup(s)
Peppermint hard candy

Cooking spray

Instructions

Melt butter in a nonstick Dutch oven. Stir in the marshmallows and cook over low-medium heat until melted, about 5 minutes. Add the extract and cereal.

Remove from heat. Stir constantly until cereal is coated with marshmallows. Stir in candies.

Coat hands with cooking spray. Roll cereal mixture into 1-inch balls and place on foil-lined cookie sheet. Refrigerate 2 hours or until firm. Yields about 2 balls per serving. (Note: Feel free to use colored rice cereal if available for a festive presentation. For parties, pop each ball into a mini-muffin liner and arrange on a serving tray.)
