Cottage cheese waffles

We obviously love Greek yogurt and we're gaga for eggs, but sometimes you need another protein-packed option in the rotation for breakfast (or as a snack). Enter: cottage cheese waffles (aka "chaffles"). Tons of flavor? Check. Satisfying crunch? Check. Filling and delicious? Check and check. Feel free to tweak the flavor by adding herbs, finely minced veggies, or different spices. Also, try dipping them in 2 tbsp of warmed pizza sauce (which adds no points) and thank us later. Pro tip: place a piece of foil or parchment underneath the waffle iron to catch any messy overflow.


Ingredients
Fat free cottage cheese
2 Tbsp
Egg
2 item(s), large
Garlic powder
¼ tsp
Dried oregano
1 pinch(es)
Kosher salt
1 pinch(es)
Black pepper
1 pinch(es)
Cooking spray
4 spray(s)
Light cheddar cheese
4 Tbsp, divided
Instructions

In a small blender, puree the cottage cheese until smooth. Add the eggs, garlic powder, oregano, salt, and pepper. Blend until well mixed.

Lightly coat plates of mini waffle maker with the cooking spray. Add 1 tbsp of cheese to bottom plate. Spoon half of egg mixture into waffle maker. Top with another 1 tbsp of cheese. Close waffle maker and cook 2 to 4 minutes, until the top lifts easily. Transfer waffle to a plate.
