You don’t have to jump through hoops to make a tasty vegan version of mac and cheese–6 ingredients and 15 minutes will do it. Silken tofu lends unparalleled creaminess to this mac and “cheese.” Nutritional yeast gives it a cheesy flavor—if you don’t tell people, they probably wouldn’t guess this contains no cheese. A little bit of turmeric adds yellow color so that the dish reads as cheesy.


Ingredients
Uncooked elbow macaroni
8 oz
Silken tofu
10 oz
Nutritional yeast
½ cup(s)
Kosher salt
¾ tsp
Garlic powder
¼ tsp
Ground turmeric
¼ tsp
Instructions

Bring a large saucepan of water to a boil. Add the pasta and cook until al dente, 8 to 9 minutes. Drain the pasta.

Meanwhile, in a blender, combine the tofu, nutritional yeast, salt, garlic powder, and turmeric; blend on high speed until completely smooth, 30 seconds to 1 minute. Return the drained pasta to the pan. Stir in the tofu mixture. Heat over medium until thoroughly heated, about 1 minute.
