Although this is a lemon pie, with its graham cracker crust and creamy texture, it gives Key lime vibes as well.

Ingredients

Monk fruit sweetener with erythritol

¾ cup(s)

Plain fat free Greek yogurt

¾ cup(s)

Lemon zest

1 Tbsp

Fresh lemon juice

Reduced-fat graham cracker pie crust

1 crust(s)

Light aerosol whipped cream

1¼ cup(s)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the monk fruit sweetener, yogurt, lemon zest and juice, and eggs until well combined. Pour the mixture into the pie crust. Bake until the filling is set around the edges and still a little wobbly in the center, 40 to 45 minutes. Remove the pie from the oven and cool to room temperature. Serve at room temperature or chilled. Top with whipped cream and slice into 10 pieces.
  3. Serving size: 1 pie slice and 2 tbsp whipped cream

Notes

The pie might develop some cracks on top as it bakes, but don’t worry—the whipped topping will cover those up.
