Ingredients

Fresh baby spinach

Light sour cream

¾ cup(s)

Grated Parmesan cheese

Instructions

  1. Bring 1 inch of water to boil in large pot. Add spinach and cook, covered, until wilted, about 5 minutes. Drain in colander, then rinse under cool water to stop cooking. Squeeze out excess liquid.
  2. Combine spinach, sour cream, Parmesan, garlic, nutmeg, and salt in food processor; process until smooth.
  3. Per serving: 1/4 cup dip

Notes

Serve the dip with lightly grilled bell pepper wedges of assorted colors for a touch of smoky flavor.
