Creamy orange cheesecake tartlets
The filling for these mini cheesecakes channels Creamsicle vibes by combining creamy vanilla and citrusy orange. The filling is thick enough that the phyllo shells will stay crisp for several hours or up to a day after filling.
Mini phyllo shell(s)
4 oz, softened
Plain fat free Greek yogurt
Monk fruit sweetener with erythritol

- Preheat the oven to 350°F. Line a sheet pan with parchment paper and arrange the phyllo shells on the pan. Bake until lightly browned and very crisp, 5 minutes. Cool to room temperature.
- In a medium bowl, stir together the Neufchatel, yogurt, monk fruit sweetener, orange zest, and vanilla until well combined. Divide the filling evenly among the phyllo shells. Top with the orange sections.
