Haas avocados are particularly rich and creamy. You can recognize them by their dark, rough-textured skin.

Ingredients

Avocado

2 item(s), use ripe ones, peeled, pit removed and chopped

Reduced calorie mayonnaise

2 Tbsp

Tomato

1 small, seeded and chopped

Jalapeño pepper

1 small, seeded and minced (wear gloves to prevent irritation)

Red onion

½ small, chopped

Cilantro

½ cup(s), chopped

Apple cider vinegar

2 Tbsp

Lemon zest

2 tsp, grated

Table salt

½ tsp

Endive

2 head(s), large, use Belgian endive, leaves separated

Instructions

  1. Pulse the avocados, mayonnaise, tomato, jalapeño, onion, cilantro, vinegar, lemon zest, and salt in a food processor, until smooth and creamy. Mound or pipe 1 heaping teaspoon of the mixture onto each endive leaf. Serve at once.

Notes

To ripen hard avocados, place them in a paper bag for about 3 days.
