Cranberry-walnut brown rice salad
Cooked long grain brown rice
Drained canned in juice mandarin oranges
¼ cup(s), roughly chopped
2 medium, chopped
2 Tbsp, preferably sherry vinegar
¼ tsp, ground
- In a large bowl, combine rice, oranges, cranberries, walnuts and scallions. Toss to combine.
- In a small bowl, whisk together vinegar, oil, salt and pepper. Add dressing mixture to rice mixture and toss to combine.
- Serving size: about 1/2 cup
