Ingredients

Long grain cooked brown rice

2 cup(s)

Drained canned in juice mandarin oranges

1½ cup(s)

Dried cranberries

¼ cup(s), roughly chopped

Chopped walnuts

¼ cup(s)

Uncooked scallion(s)

2 medium, chopped

Vinegar

2 Tbsp, preferably sherry vinegar

Olive oil

2 tsp

Table salt

½ tsp

Black pepper

¼ tsp, ground

Instructions

  1. In a large bowl, combine rice, oranges, cranberries, walnuts and scallions. Toss to combine.
  2. In a small bowl, whisk together vinegar, oil, salt and pepper. Add dressing mixture to rice mixture and toss to combine.
  3. Serving size: about 1/2 cup
