Couscous with sausage, almonds and raisins

Couscous is a great pantry food. It`s a snap to prepare and adapts well to many variations.

Ingredients

Uncooked turkey sausage

4 oz, removed from casing

Onion

½ medium, diced

Ground cumin

¼ tsp

Ground cinnamon

¼ tsp

Ground coriander

¼ tsp

Raisins

2 Tbsp

Fat free chicken broth

1 cup(s)

Uncooked couscous

½ cup(s)

Chopped almonds

1 Tbsp, unblanched, toasted

Instructions

  1. In a nonstick saucepan, cook sausage over medium heat, breaking it up as it cooks.
  2. Stir in onion, cumin, cinnamon and coriander; cook until onion has softened. Stir in raisins and chicken broth and bring to a simmer.
  3. Stir in couscous, cover, remove from heat and let stand 5 minutes.
  4. Fluff with a fork, sprinkle with almonds and serve. Yields about 3/4 cup servings.
