Ingredients
Uncooked string beans
1 pound(s), trimmed
Canola oil
1 Tbsp
Red onion
1 medium, thinly sliced
Garlic
1 clove(s), minced
Table salt
¼ tsp
Cayenne pepper
⅛ tsp
Unsweetened shredded coconut
¼ cup(s)

Bring a large saucepan of water to a boil over medium-high heat. Add the green beans and cook until bright green and crisp-tender, about 5 minutes; drain.

Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, salt, and cayenne; cook, stirring frequently, until the onions are softened, about 5 minutes. Add the coconut and cook, stirring constantly, until lightly browned, about 1 minute. Add the green beans and cook, stirring constantly, until heated through, about 1 minute longer. Yields about 1 cup per serving.
