This family-friendly restaurant dish is easy to recreate at home. The key is to use a cast-iron skillet to char the steak and the pepper-onion mix.

Ingredients

Cooking spray

4 spray(s)

Uncooked lean and trimmed beef flank steak

1 pound(s)

Fajita seasoning mix

2 Tbsp, divided

Yellow bell pepper

1 large, cut into strips

Red bell pepper

1 large, cut into strips

Red onion

1 small, cut into strips

Low carb, high fiber tortilla wrap

12 oz, 8 (1 1/2 oz) tortillas

Avocado

1 item(s), sliced

Salsa

½ cup(s)

Lime

4 wedge(s)

Instructions

  1. Coat a large cast-iron skillet with cooking spray and heat over medium-high. Coat the steak evenly with 1 tbsp fajita seasoning, then with cooking spray, and add to the skillet. Cook 5 to 6 minutes per side for medium-rare or to desired degree of doneness. Remove the steak to a cutting board and let stand for 10 minutes; cut across the grain into thin slices.
  2. Meanwhile, add the bell peppers and onion to the skillet; cover and cook on medium-high until lightly charred and crisp tender, 6 to 8 minutes, stirring occasionally. Stir in ¼ cup water and the remaining 1 tbsp fajita seasoning.
  3. Divide the steak and pepper mixture evenly among the tortillas; serve with the avocado, salsa, and lime wedges.
  4. Serving size: 2 fajitas

Notes

If you don’t have a lid for your pan, just cover it with foil so the veggie mix will steam-sauté and get tender.
