Cinnamon-Apple Baked Oatmeal
Uncooked old fashioned rolled oats
Packed brown sugar
2 large egg(s)
Fat free skim milk
2 medium, unpeeled, cored, and shredded
3 cup(s), (such as strawberries, blueberries, raspberries, currants), cut if large
- Preheat oven to 375°F.
- In a large bowl, stir together oats, brown sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk eggs, milk, vanilla, and 3⁄4 cup water. Stir milk mixture into oats mixture; fold in shredded apples.
- Coat an 11 x 7-inch baking dish with nonstick spray. Spoon in oats mixture. Over top, evenly sprinkle pecans. Bake, uncovered, until set, 25 to 30 minutes. Cut into 6 pieces and serve warm with berries.
- Serving size: 1 piece baked oats and 1⁄2 cup berries
