This hearty, prep-ahead breakfast comes together in a snap the night before, and cooks up in the morning in less than a half-hour. It sets you up for several days of easy, healthy morning meals: Simply reheat a piece in the microwave for about a minute and top with fruit. Shredded apple in the oat mixture adds a little crunchy texture and lots of sweetness, replacing much of the added sugar you might otherwise expect. Though we call for berries as the topping, you can use any fruit you have on hand—try sliced bananas, orange sections, pomegranate seeds, or diced pears.

Preheat oven to 375°F.

In a large bowl, stir together oats, brown sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk eggs, milk, vanilla, and 3⁄4 cup water. Stir milk mixture into oats mixture; fold in shredded apples.

Coat an 11 x 7-inch baking dish with nonstick spray. Spoon in oats mixture. Over top, evenly sprinkle pecans. Bake, uncovered, until set, 25 to 30 minutes. Cut into 6 pieces and serve warm with berries.
