Thanks to cottage cheese and powdered peanut butter, each of these creamy, rich snacks contains a whopping 6 grams of protein. They taste like chocolate-PB cheesecake and store well for up to one week in the fridge—making them a smart make-ahead option for grab-and-go snacking. The mixture will be soft but should be shapeable; be sure to dampen your hands to help prevent sticking.

Fat free cottage cheese
1 cup(s)
Chocolate peanut butter powder
1⅓ cup(s)
Powdered sugar (confectioner's)
2 Tbsp
Unsweetened cocoa powder

Instructions

In a food processor, process the cottage cheese on high speed until smooth, about 1 minute, stopping to scrape the sides of the bowl as needed. Add the powdered peanut butter and powdered sugar; process until well combined.

Place the cocoa powder in a small shallow dish. Divide the cottage cheese mixture into 12 equal portions. With slightly dampened hands, roll each portion into a ball; roll the balls in cocoa powder. Store the truffles in the refrigerator.
