The rich, creamy foundation for this nearly instant mousse is nonfat cottage cheese. It whips to a smooth consistency in a minute or so in the food processor, and then gets flavored and sweetened with cocoa powder, powdered sugar, and vanilla. Spooned into small glasses and topped with whipped topping and crushed candy canes, it’s an easy, super-quick, very merry treat.

Ingredients

Fat free cottage cheese

Vanilla extract

1 tsp

Powdered sugar (confectioner's)

Light aerosol whipped cream

Candy cane

17 gm, 4 mini candy canes, crushed

Instructions

  1. Spoon the cottage cheese and vanilla into a food processor, and process on high speed until smooth, about 1 minute, stopping once or twice to scrape down the sides of the bowl. Add the powdered sugar and cocoa powder; process until well combined, about 20 seconds. Divide the mixture evenly among 4 small glasses or bowls; top evenly with the whipped topping and crushed candy canes.
