Love chocolate covered cherries? Then you’ll adore this creamy and luscious homemade pudding. There’s something so wonderfully delicious about a pudding that’s made from scratch. No box mix used here. Melted unsweetened chocolate gives our version such a silky texture and pure rich flavor you’d never guess we used skim milk in the place of the whole variety. We used almond extract in addition to vanilla to enhance the cherry flavor. Double the recipe and refrigerate half the pudding for an instant chilled dessert the next day. Just press plastic wrap directly onto the pudding before refrigerating to prevent a skin from forming.

Instructions

  1. Combine the milk, sugar, cocoa powder, and cornstarch in a medium saucepan over medium-high heat. Cook, stirring constantly, until the mixture bubbles and thickens, about 10 minutes.
  2. Remove the pan from the heat and stir in the chocolate until it melts. Stir in the cherries, vanilla extract, and almond extract.
  3. Divide the pudding among 6 bowls and serve at once, let cool to room temperature, or chill. Yields about 1⁄2 cup per serving.
