The possibilities are endless with this delicious dressing. Branch out beyond just drizzling this zesty goodness over garden salads and use it to give dishes like chicken salad, pasta salad or grain bowls a southwestern flair. Or try it as a snack and serve it as a creamy vegetable dip along with carrot sticks, grape tomatoes, and cucumber slices. It could also be used as marinade to spice up humble grilled chicken or fish. The recipe makes about makes 1 cup (2 tablespoons per serving). If you have any leftover, store it in the refrigerator for up to a week.
