With juicy grapes and crisp apple, this version of chicken salad offers a fresh, sweet twist. The baby spinach holds up surprisingly well, as does the apple, so you can prep the salad a day in advance if you’d like.

Ingredients

Apple cider vinegar

2 Tbsp

Extra virgin olive oil

1 Tbsp

Dijon mustard

1 Tbsp

Kosher salt

¼ tsp

Black pepper

¼ tsp

Grapes

1 cup(s), green, seedless, halved

Apple

1 small, Pink Lady suggested, cored and cut into matchsticks

Cooked skinless, boneless chicken breast

6 oz, coarsely shredded

Baby spinach

2 cup(s)

Walnuts

¼ cup(s), coarsely chopped

Instructions

  1. In a large bowl, whisk together the vinegar, oil, mustard, salt, and black pepper. Add the grapes and apple and toss well to coat. Add the chicken and spinach; toss gently to combine. Sprinkle with the walnuts.
  2. Serving size: about 2 ½ cups
