Chicken Tikka Masala (slow cook)
Canned crushed tomatoes
1 small, finely chopped
1 small clove(s), minced
1 tsp, fresh, minced
Dark brown sugar
Uncooked boneless skinless chicken thigh(s)
½ pound(s), 2 (1/4-pound) thighs
Plain lowfat Greek yogurt
2 Tbsp, fresh, chopped (optional) plus sprigs
Uncooked red onion(s)
¼ cup(s), chopped, thinly sliced
- Stir together tomatoes, shallot, garlic, ginger, garam masala, brown sugar, salt, cumin, and coriander in 2-quart slow cooker. Add chicken. Cover and cook 2–3 hours on High or 4–6 hours on Low. Stir in yogurt and chopped cilantro.
- Divide evenly between 2 plates or shallow bowls. Garnish with cilantro sprigs and onion.
- Per serving: 1 chicken thigh and about 1/2 cup sauce
