Slow Cooker Chicken Tikka Masala

Our slow cooker version of chicken tikka masala (aka butter chicken) uses Greek yogurt for creaminess, along with classic spices like garam masala, cumin, and coriander. Warm naan bread can swap in for traditional rice as a side for this classic Indian dish


Ingredients
Canned crushed tomatoes
½ cup(s)
Shallot
1 small, finely chopped
Garlic
1 small clove(s), minced
Fresh ginger
1 tsp, fresh, minced
Garam masala
½ tsp
Dark brown sugar
½ tsp
Kosher salt
½ tsp
Ground cumin
¼ tsp
Ground coriander
⅛ tsp
Uncooked skinless boneless chicken thigh
½ pound(s), 2 (1/4-pound) thighs
Plain low fat Greek yogurt
2 Tbsp
Cilantro
2 Tbsp, fresh, chopped (optional) plus sprigs
Red onion
¼ cup(s), chopped, thinly sliced
Instructions

Stir together tomatoes, shallot, garlic, ginger, garam masala, brown sugar, salt, cumin, and coriander in 2-quart slow cooker. Add chicken. Cover and cook 2–3 hours on High or 4–6 hours on Low. Stir in yogurt and chopped cilantro.

Divide evenly between 2 plates or shallow bowls. Garnish with cilantro sprigs and onion.
