Everyone loves a dinner board; it’s such a fun way to eat, and a good way to encourage the whole family to try a variety of foods. This one is almost no-cook and very easy to pull together. You simply gussy-up precooked chicken and set out all the components for folks to build their own tacos. Look for pre-cut jicama, pineapple, and mango in the produce section to save yourself some work.

Fresh lime juice

Smoked paprika

½ tsp

Ground cumin

½ tsp

Garlic powder

½ tsp

Cooked shredded chicken breast

Instructions

  1. In a large microwave-safe bowl, whisk together the lime juice, paprika, cumin, and garlic powder. Add the chicken and toss gently to coat. Cover and microwave on high until thoroughly heated, 1 to 2 minutes. Season to taste with salt.
  2. Arrange the chicken, tortillas, lettuce, pico de gallo, salsa, guacamole, chips, jicama, radishes, pineapple, and mango on a sheet pan or large cutting board. Sprinkle the Tajin over the fruit, if desired.
  3. Serving size: one-fourth of all the items on the board
