The breading on this schnitzel gets its delicious flavor from fresh chives and grated cheese.

Ingredients

Uncooked skinless boneless chicken breast

1 pound(s), 2 [8-oz] pieces

All-purpose flour

2 Tbsp

Egg

1 medium egg(s)

Fat free skim milk

1 Tbsp

Panko breadcrumbs

1 cup(s)

Chives

2 Tbsp, finely chopped

Grated Parmesan cheese

2 Tbsp

Olive oil

2 tsp

Instructions

  1. Preheat oven to 400°F. Line a large baking pan with parchment paper.
  2. Slice each chicken breast in half horizontally to make 4 thin cutlets. Place flour on a plate. Whisk egg and milk in a shallow bowl. Combine panko, chives, and cheese on a large plate. Working with one piece of chicken at a time, dust chicken in flour, dip into egg mixture, then coat in breadcrumbs. Place breaded chicken on a plate.
  3. Heat oil in a large nonstick skillet over medium–high heat. Cook chicken until golden, 1 to 2 minutes per side. Transfer chicken to the prepared pan and bake until chicken is cooked and an internal temperature of 165°F, about 6 to 8 minutes.
  4. Serving size: 1 piece of chicken

Notes

Serve with fresh lemon wedges if desired.
