Chicken salad gets a creamy makeover in this easy wrap for one. Swap in other veggies you have on hand such as shredded carrots, baby arugula or chopped roasted red pepper.

Ingredients

Cooked shredded chicken breast

3 oz

Plain fat free Greek yogurt

2 Tbsp

Fresh lime juice

1 tsp

Curry powder

tsp, or to taste

8" low carb flour tortilla

1 tortilla(s)

Mango chutney

1 Tbsp

Baby spinach

¼ cup(s)

Cucumber

¼ cup(s), thinly sliced

Instructions

  1. In a small bowl, combine chicken, yogurt, lime juice, and curry powder.
  2. Spread tortilla with mango chutney. Layer with chicken salad, cucumber, and spinach, and then roll up.
