  1. In large shallow bowl, whisk vinegar, oil, garlic, salt, black pepper, oregano, and 1 tbsp water.
  2. Spread breadcrumbs onto small plate. Dip 1 chicken cutlet in vinegar mixture, turning until coated. Lightly coat both sides of cutlet with breadcrumbs and transfer to large plate. Repeat with remaining chicken. Lightly spray chicken with nonstick spray.
  3. Preheat air fryer to 375°F for 3 minutes. Spray Crisper Tray with nonstick spray and add 2 chicken cutlets. Air-fry chicken until golden and crisp, 4 to 5 minutes. Flip chicken over and spread 2 tbsp marinara sauce on each cutlet. Sprinkle each with 1 tbsp mozzarella and 1 tbsp Parmesan.
  4. Air-fry until chicken is cooked through (an internal temperature of 165°), crisp, and mozzarel- la is melted, 2 to 3 minutes. Remove from air fryer and loosely cover with foil to keep warm. Repeat process with remaining chicken, marinara, mozzarella, and Parmesan.
  5. Place a few arugula leaves on each slice of toast and top each with a chicken breast. Sprinkle with red pepper (if using). Serve warm.
