Whip up this dinner from leftover cooked chicken breast and cooked sliced roasted peppers, or cook raw chicken strips and fresh peppers in a skillet with cooking spray and your favorite dried fajita seasonings. You can also serve this as a taco salad over shredded romaine, with rice, or wrapped up in tortillas.

Corn tortilla(s)

Homemade guacamole

Cooked onion(s)

¼ cup(s)

Cooked sweet red pepper strips

Fat free salsa

Cilantro

1 Tbsp, and/or sliced scallions

Instructions

  1. Warm chicken and pepper strips; serve with warmed beans and salsa. Squeeze fresh lime over top; garnish with cilantro and/or scallions.
