Here’s a great portable way to get all the zest of Caesar salad when you’re on the run. We use whole-wheat pitas.

Ingredients

Plain low fat yogurt

¼ cup(s)

Reduced calorie mayonnaise

2 Tbsp

Grated Parmesan cheese

2 Tbsp

Garlic

1 clove(s), crushed through a press

Fresh lemon juice

2 tsp

Dijon mustard

½ tsp

Uncooked anchovies

oz, boneless, paste

Black pepper

¼ tsp, freshly ground

Cooked boneless skinless chicken breast

2 cup(s), chopped, chopped

Whole wheat pita

4 small

Lettuce

8 leaf/leaves, large, Romaine variety

Instructions

  1. Combine the yogurt, mayonnaise, cheese, garlic, lemon juice, mustard, anchovy paste, and pepper in a medium bowl. Add the chicken and toss to coat with the dressing.
  2. Cut a pocket in each pita. Fill each pita with one-quarter of the chicken mixture and 2 lettuce leaves. Yields 1 sandwich per serving.

Notes

Although this wouldn’t be as strict an interpretation of a Caesar salad, peppery watercress is a delightful substitute for the romaine lettuce. You would need 1 small bunch, cleaned.
