Cheesy vegan broccoli rice

Riced broccoli makes for a versatile side dish that will go with pretty much anything. We give ours a super-cheesy flavor while keeping it vegan. The secret is nutritional yeast, which lends an undeniably cheesy taste. If you’ve never bought it before, look for it in large “shake cans” with the seasonings or near the active dry yeast in your supermarket. It’s also great in vegan pasta dishes, in salad dressings, and on popcorn. We give instructions for making your own broccoli rice, but you can also use pre-prepared riced broccoli.

Broccoli

Olive oil
2 tsp
Garlic

Kosher salt

Black pepper

Nutritional yeast

Instructions

In a food processor, pulse half of broccoli until finely chopped to a rice-like consistency. Pour into a medium bowl. Repeat process with remaining broccoli.

Heat oil in a medium nonstick skillet over medium-high heat. Add garlic; sauté 1 minute. Add broccoli rice, salt, and pepper; sauté until crisp-tender, 2 to 3 minutes. Stir in nutritional yeast and water.
