Simply seasoned lean ground beef and American cheese get tucked inside tortillas, which are rolled up and air-fried until alluringly crisp. If your air fryer basket won’t hold the taquitos, or if you don’t have an air fryer, you can cook these in the oven at 425°F for 10 to 15 minutes.

Low carb, high fiber tortilla wrap

8 tortilla(s)

Reduced fat American cheese

4 slice(s), halved

Plain fat free Greek yogurt

Ketchup

Chopped dill pickle

1 Tbsp

Mustard

1 tsp

Lettuce

½ cup(s), shredded

Tomato

Instructions

  1. Preheat an air fryer, if necessary, to 400°F. In a medium bowl, combine the beef, garlic powder, and salt. Divide the beef mixture into 8 equal portions; spread each portion in a thin layer over half of each tortilla. Arrange ½ cheese slice on each tortilla, over the beef; roll up the tortillas. Arrange the taquitos in a single layer in an air fryer basket. Coat the taquitos with cooking spray. Air-fry until the tortillas are browned and the beef is cooked through, 10 to 12 minutes, turning over after 6 minutes.
  2. Meanwhile, in a small bowl, stir together the yogurt, ketchup, pickle, and mustard. Arrange the taquitos on a platter. Spoon the sauce over the middle of the taquitos; top with the lettuce and tomato.
