- Coat a grill rack with cooking spray. Preheat the grill to medium-high (about 450°F). Alternately, coat a grill pan with cooking spray and heat over medium-high.
- Place the beef in a large bowl; sprinkle the beef with salt and pepper. Shred the onion on the large holes of a box grater; add the onion to the beef. Mix well to combine. Divide the mixture into 4 equal portions. Roll each portion into a 6 ½- to 7-inch log. Place the beef logs on the grill rack or grill pan. Grill until well marked and cooked through, about 10 minutes, turning occasionally.
- Line each hot dog bun with 1 cheese slice; tuck 3 pickles into each bun. Place 1 beef log in each bun; top each burger dog with 1 teaspoon mustard.
