This recipe uses a protein-packed, egg white tortilla-style wrap but feel free to use your favorite flour or corn tortilla instead. You can warm the wrap in the microwave for 10 seconds or warm it in a nonstick skillet over medium-high heat for 15 to 30 seconds per side.

Shredded reduced-fat Mexican-style cheese

  1. Coat a large nonstick skillet with cooking spray; heat over medium-high. Add sausage, onions, and mushrooms; cook, stirring frequently, until vegetables are slightly softened, about 5 minutes. Reduce heat to low; pour in eggs and cook, stirring gently, until eggs are scrambled and just set, 1 to 2 minutes.
  2. Meanwhile, warm egg white wrap, if desired; place on a plate. Top wrap with egg mixture, sprinkle with cheese, roll up, and serve immediately.
  3. Serving size: 1 wrap


Add fresh herbs such as cilantro or chives for an extra pop of flavor.
