Cat Cora’s “everything bagel” squash wedges
This recipe also works well with butternut, Kabocha or delicata squash. Serve as is, with a Greek-yogurt dipping sauce, or even, freshly made salsa.
Uncooked acorn squash
Everything bagel seasoning blend
Olive oil cooking spray
1 pinch(es), or to taste
- Preheat oven to 400°F. Coat a large baking sheet with cooling spray.
- Cut squash into 1-inch wedges; place in a large bowl and lightly coat with cooking spray. Sprinkle with seasoning; toss to coat. Arrange squash in a single layer on prepared pan. Bake, turning halfway through, about 45-50 minutes.
- Serving size: 1/2 squash (about 6 wedges)
