Pizzelle (peetz-ELL) are thin, crisp Italian wafer cookies that are cooked in a round cast-iron press similar to a waffle iron.

Ingredients

Whole milk ricotta cheese

½ cup(s)

Powdered sugar (confectioner's)

5 Tbsp

Vanilla extract

½ tsp

Orange zest

1 tsp

Semisweet chocolate

2 Tbsp, mini chips variety

Vanilla wafer

8 cookie(s), pizzelle variety

Powdered sugar (confectioner's)

Instructions

  1. Stir together the ricotta, confectioners’ sugar, vanilla, and orange zest in a small bowl. Stir in the chocolate chips. Spoon 2 tablespoons of the ricotta filling on each of 4 wafers. Top with the remaining 4 wafers to make sandwiches. Dust lightly with confectioners’ sugar and serve at once. Yields 1 cannoli crisp per serving.

Notes

Pizzelle are often shaped into ice-cream cones while warm. Look for packaged pizzelle in the bakery department or ethnic food isle of larger supermarkets and in specialty food stores.
