Canadian bacon pancake muffins

With protein in the convenient pancake mix as well as the Canadian bacon, these quick sweet-and-savory muffins offer stick-to-your-ribs satisfaction. We give the chopped Canadian bacon a quick sauté in a hot skillet to lightly brown it and intensify its meatiness; if you’re short on time, you can skip this step. A hint of maple syrup gives them a little sweetness; you can serve with additional syrup of your choice, if desired.

High protein pancake mix

Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners.

Coat a medium nonstick skillet with nonstick spray. Heat pan over medium-high heat. Add Canadian bacon; sauté until lightly browned, about 3 minutes. Remove from heat and cool slightly.

In a medium bowl, stir together pancake mix, water, maple syrup, and vanilla until just combined. Fold in half of Canadian bacon. Divide mixture evenly among prepared muffin cups. Sprinkle remaining Canadian bacon evenly over top. Bake at 350°F until a wooden pick inserted in center comes out clean, about 15 minutes.
