A wonderful way to dress up your greens. Look for powdered buttermilk in your super market’s baking aisle. It is a cooking godsend: you don't have to buy a whole carton of fresh buttermilk for the few tablespoonfuls you need in a recipe. This tangy, creamy dressing is divine drizzled over a plate of sliced ripe tomatoes, tossed with diced cucumbers, or served as a dip for cut veggies. Add some chopped fresh herbs like dill, tarragon, and parsley to the mix to give it a green goddess flair. This is a good basic dressing to enjoy as it is, or to build upon.

Ingredients

Powdered buttermilk

¼ cup(s)

Onion powder

1 tsp

Sugar

½ tsp

Table salt

½ tsp

Black pepper

½ tsp, freshly ground

Water

6 Tbsp

Apple cider vinegar

2 Tbsp

Dijon mustard

2 tsp

Instructions

  1. In a small bowl, stir together buttermilk, onion powder, sugar, salt and pepper.
  2. Whisk in water until smooth; whisk in vinegar and mustard until creamy. Yields about 1 1/2 tablespoons per serving.
