This inventive take on broccoli-chicken casserole uses prepared stuffing as the “crust.” We cook the casserole covered to ensure everything gets piping hot, then uncover it for the last few minutes so the stuffing can brown and crisp up.

Ingredients

Cooking spray

Bread stuffing dry mix

6 oz, chicken flavored

Frozen chopped broccoli

14 oz, or frozen broccoli florets, thawed

Campbell's Condensed Healthy Request Cheddar cheese soup

10¾ fl oz, or similar product

Cooked skinless boneless chicken breast

12 oz, cubed

Reduced fat cheddar cheese

¾ cup(s), shredded

Instructions

  1. Preheat the oven to 350°F. Coat an 11 x 7–inch baking dish with cooking spray.
  2. Bring 1 ½ cups water to a boil in a medium saucepan. Stir in the stuffing mix; cover and let stand for 5 minutes.
  3. While the stuffing stands, stir together the broccoli and soup in a large bowl; fold in the chicken. Spoon the chicken mixture into the prepared baking dish; sprinkle evenly with the cheese. Spoon the stuffing evenly over the top. Cover and bake for 25 minutes; uncover and bake until the stuffing is slightly crisped and browned, 10 to 12 minutes.
