Bright Green Salsa Verde

Fresh and bright, this salsa requires no cooking at all. If you like spicy food, feel free to add a diced fresh jalapeño or a handful of pickled jalapeño slices before blending.
tomatillo1 pound(s), husked, rinsed, cored, roughly chopped (about 10 medium)
uncooked scallion(s)6 medium, ends trimmed, coarsely chopped
garlic clove(s)1 medium clove(s), minced
cilantro12 sprig(s), tender stems included, coarsely chopped (1 large handful)
fresh lime juice¼ cup(s)
kosher salt2 tsp
- Place all ingredients in a blender or food processor; puree until smooth. Season to taste with additional lime juice and salt if needed. Serve immediately.
