Fresh and bright, this salsa requires no cooking at all. If you like spicy food, feel free to add a diced fresh jalapeño or a handful of pickled jalapeño slices before blending.

Ingredients

tomatillo

1 pound(s), husked, rinsed, cored, roughly chopped (about 10 medium)

uncooked scallion(s)

6 medium, ends trimmed, coarsely chopped

garlic clove(s)

1 medium clove(s), minced

cilantro

12 sprig(s), tender stems included, coarsely chopped (1 large handful)

fresh lime juice

Instructions

  1. Place all ingredients in a blender or food processor; puree until smooth. Season to taste with additional lime juice and salt if needed. Serve immediately.
  2. Serving size: 3 Tbsp

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, but bring to room temperature before serving.
