Tired of oatmeal for breakfast? Try bulgur. Generally served in savory preparations, bulgur makes an excellent whole-grain breakfast food. Cooking the grain in a mix of fruit juice and water with nutmeg infuses the bulgur with flavor as it simmers. Pears are delicious here, but you could substitute apples and apple juice, pitted cherries and tart cherry juice, or dried plums and pruned juice—and the list of variations could go on. You can spoon the cooked bulgur into 4 bowls and top one with yogurt to enjoy right away. Cover the others when cool with plastic wrap and store in the refrigerator. Reheat a serving in the microwave for 1 1/2 o 2 minutes and then top with the yogurt for even quicker breakfasts on succeeding mornings.

1 large, cored and chopped

Nectar (any type)

1 cup(s), pear

Water

1 cup(s)

Uncooked bulgur

1 cup(s)

Ground nutmeg

¼ tsp

Table salt

¼ tsp

Low fat vanilla yogurt

½ cup(s)

Instructions

  1. Put pear, pear nectar, 1 cup of water, bulgur, nutmeg and salt into a medium saucepan and bring to a boil.
  2. Cover and reduce heat to very low. Simmer until liquid is absorbed and bulgur is tender, about 15 minutes.
  3. Spoon into 4 bowls and top each with 2 tablespoons vanilla yogurt.
