Like a slow cooker, the bread machine is a wonderful invention that lets cooks dump ingredients and go about their day only to return to something spectacular for their minimal efforts. Dry milk powder is a common ingredient in bread machine recipes. It acts as a tenderizer, retarding gluten, for a softer loaf. This bread is excellent plain, toasted and schmeared with ripe avocado, or sandwiched with your favorite fillings, and it's a low-calorie treat. Feel free to substitute your favorite herbs—dried or fresh—when to keep loaves ever-changing.
